Mansaf. It is considered the national dish of Jordan, and it’s usually our favorite dish for every family occasion.

It’s a traditional Jordanian dish made of lamb cooked in a sauce of fermented dried yogurt and served with rice. We mostly serve it in a large plate for guests as a way to express hospitality. Its a sign of generosity when served with big pieces of fresh meat and thick yogurt.

This dish in particular is eaten by using one hand only, making a small ball of rice by hand, and then scroll it into the mouth. As part of our traditions, hosts should not stop eating before the guest leaves the dining table. Instead, they could eat slowly or pretend eating just to make the guest feel comfortable with eating as much as they want.
