I worked at a very busy Olive Garden for a number of years and while the soups and sauces are freshly made every day in industrial sized boilers (similar to the picture), the desserts are pre-made from a vendor that sells fancy desserts exclusively for the Olive Garden. The pastas and salads are prepped by suppliers and the canned tomatoes are imported Italian San Marzano tomatoes. Meats and pastas are freshly cooked to order, the lasagna is made in-house and breadsticks are supplied daily by local bakeries. Overall, with the exception of the desserts, it's freshly cooked food with fairly high quality ingredients. Very mass produced food, but high quality.
