White sugar is 99.99% sucrose and manufactured in very large scale typically like any processed food item. Where is brown sugar is is sugar molecule coated with molasses between 3% to 7%. connoisseurs prefer their coffee, cookies and cake with brown sugar.
brown sugar is also many types some like it moist dark brown with molasses (muscavado), some like it light brown medium grain(demerara), and some like it very large grain brown sugar (coffee crystals).
Because of uniqueness of taste and flavour brown sugar is never manufactured in large scale. Brown sugar is always made in small batches and packed as per the market demand. This makes cost of production / packing/ marketing brown sugar much more than refined white sugar.
