Long working hours - I mean 12hours a day minimum, 6 day a week

Physically demanding - standing all day, knowing a loss of concentration can cause your life. Half the time you're working with knives, the other half, fire.

Mentally demanding - the fast paced environment of a commercial kitchen is insane. You got 3–5 minutes to get a pasta dish ready for service, 8–10minutes for a risotto. And multiple pans cooking at different timings. Each plate has to be plated to perfection, consistent with every other plate that you call for service.

Low pay - chefs are cooks first, and cooks make basically lower than the average pay in the country. That's for comparing with typical blue collared office workers mind you.

You basically do everything over and over again for at least 3 months, till the menu changes - if it doesn't, good luck. Repetition will kill you mentally eventually.
