  • Curd - 3 tbsp
  • Baking soda - ¼ tsp

  • Cumin seeds - ½ tsp
  • Salt - ½ tsp
  • Oil - for frying

Method for preparing Mangalore Buns Recipe

  1. First You should mash two ripe bananas with three teaspoons of curd, two tablespoons of sugar, and half a teaspoon of cumin seeds.
  2. Add 1/2 tsp of salt and 1/4 tsp of baking soda to the mixture.
  3. As you knead add 2 cups of maida or all-purpose flour into a smooth and sticky dough, add them to the bowl gradually.
  4. Avoid using any water when kneading the dough.
  5. The dough should be covered with a damp cloth and allowed to ferment for 7 to 8 hours.
  6. After fermentation and sufficient resting, the dough becomes elastic and slightly looser.
  7. The dough is ready for use after resting for at least 5 to 6 hours.
  8. The dough is prepared to be shaped into buns once it has rested for at least 5 to 6 hours. Do a quick kneading of the dough before shaping it into buns. The dough should be made into lemon-sized balls, lightly sprinkled with flour, and rolled out.
  9. For deep frying, a little piece of dough should be dipped into hot oil.
  10. The dough will rise to the top of the pan if the oil is heated enough. Reduce the intensity of the flame.
  11. Wait another three to four minutes if the oil hasn't heated up by then.
  12. After discarding any residual flour, cook each rolled buns separately over a medium flame. The buns puff as soon as you drop them in the oil.
  13. Remove the poori from the heated oil once it is golden brown on all sides and set it on a dish covered in paper towels.
  14. Serve these, delicious Mangalore buns alone or with sambar or coconut chutney. They go nicely with potato bhaji or kurma as well.
