Whenever I see depictions of chefs in movies and TV they are generally shown with perfectly white coats moving far too slowly. Kitchen work is extremely stressful and you work at a breakneck pace. It's hot, sweaty, brutal, dirty, and dangerous work.

The other misconception about kitchens is that someone is always getting bollicked or the chef is having a meltdown every three seconds. Or that cooks are angry in general.

Yes, we shout at each other, but only to be heard by everyone that needs to hear and we don't have time for pleasantries. So it might seem blunt to outside ears but usually kitchen crews are tight with each other. If my boy down the line shouts 'SCALLOPS' at me, he just needs scallops and he's not trying to hurt my feelings.

And if the chef is needing to discipline someone every three seconds then they are not running the kitchen properly. Most good kitchens I've worked in are well oiled machines where people enjoy working with one another.

So we might seem angry because we're shouting and don't use pleases or thank yous, but we're just trying to get a hard job done to a high standard in a short time frame.
