Roasted radishes…yup that’s what I said…radishes. So yummy! The first time I made them I was so surprised that I ate the whole batch and had to go back to the market for more radishes.
Pretty simple to make:
Clean and cut in half or quarters depending how large they are.
Melt about 2 Tbs butter( or oil of your choice) but the butter is yummy.
Toss the radishes with the butter making sure all coated. (baggie works for this or use your hands.)
Spread out on baking sheet lined with parchment.
Sprinkle with rosemary, salt and pepper. (other spices can be added and/or substituted) get crazy…100’s of combos will work
Bake at 375 for about 30 min.
ENJOY…roasting brings out a whole new flavor and they can be soooo inexpensive in season.
