You wouldn’t need to reduce the cabinets, wall in particular, a wall cabinet if I remember are set at 450 mm above the worktop, so you could reduce this height 450 mm to compensate for your ceiling height, I wouldn’t advise you to cut/reduce the wall or base units, as you wouldn’t probably get the required finish on the units, most ceiling are 2.4 m high.

If you can already see your 2x6 supports above you it's just a matter of getting a fold-down 🪜 installed then taking measurements where you can use 1/2 inch (or 3/4 inch plywood as I prefer) over the top of the 2x6’s to use as a floor then (as I did) tied in some lights by tapping into my garages overhead outlet where the only thing plugged into it was the garage door opener.
