Hoo boy - I am gonna answer the heck out of this one.
So: avocado is delicious! Guacamole is delicious! Toast is delicious! But should guacamole and toast ever meet? Of course! But does guacamole + toast meet the same food profile as avocado + toast? I would suggest that they do not! Food opinions incoming! (I call these “facts,” but I'm sure some people who hate food and therefore hate life might disagree with me)
Consider: Avocado + toast is lovely. Mash up some avocado, add some lemon juice, spread it on toast. Or just slice up some avocado, salt it lightly, place on toast: tasty town.
Consider: Avocado + other tasty junk = guacamole, which is basically heaven. Great guacamole is fresh, tangy, slightly creamy, slightly chunky, and a bit spicy.
Consider: Guacamole + toasted things works great. Chips, pita, even just some toasted tortilla - whatever your perferred method of dip-to-mouth conveyance.
Consider: while tasty, the guacamole + toast combo does not match up to avocado and toast. Sorrynotsorry. Avocado and toast first got popular because it was a healthy, simple snack with fewer calories than butter or jam and toast. You could easily make it at home in seconds, and it felt prehaps fresher or more oxidizing or CrossFit friendly or something like that. Then it became A Thing and started popping up in restaurants, bakeries, and cafes. Soon it was dubbed a “hipster trend.”
Guacamole had a similar trajectory - what began as a fresh and simple way to eat avocado in the SW and Mexico became a foodie thing.
But where avocado is simple, creamy, and effortless, guacamole takes time, other ingredients, and feels a bit heavier or perhaps richer than just avocado. Avocado + toast remains simple and quick, whereas guacamole + toast takes more time to prep and feels less like a healthy, quick breakfast and more like a strange party food. Why not just have a chip or tortilla? Avocado is one ingredient. Guac is many. Tomatoes do not equal salsa, and garbazno beans do not equal hummus.
TL;DR: can one eat guac + toast? Sure.
Is it tasty? Yes.
Will it or can it be A Thing in the way avocado + toast is? Given the increased complexity, effort, time, taste, and mouthfeel of guac compared to avocado, no.
