Germany is a meritocracy when it comes to education and the job market. From the 4th grade on people are placed in educational tracks right away according to their previous merits and what they have done. This places a much stronger emphasis on a more hard line approach of performing at one's best.
Many of the historical traits from a German culture originate from a Prussian society instilling a sense of order, obedience to authority (obrigkeitshörig) combined with a very strong class thinking. The language and addressing people in a more formal way from the beginning, places demands on women (as well as men) to carry oneself to a certain etiquette and standard. At least in a woman's traditional domains, the German woman sees herself as omnipotent, were the lines are drawn more clearly between women and men in a class centric German society. As a consequence, German women are in many areas still battling for equal rights from what by tradition is still regarded as male domains in Germany, although it is getting much better. So doing well in German society requires a strong mind, were many German women for example are against affirmative actions and gender quoting in the job market. German women are smart enough to make it on their own merits, and know that artificial help will not help their cause. That the German government passed a law for gender quoting in public boards was a breakthrough for gender equality in Germany.
So you should calculate with strong minded, individual women who are not easily swayed for a quickie romance but rather a more serious and stable relationship with at least 3–4 serious dates before you can start uttering the word romance.
Of course you will find other women as well but its more likely that they wont be your match due to how the German education system works.
What German women look for in a partner is what every woman in the world is looking for, which depends on individual preferences. Due to the cultural traits in Germany you can count on that a lot of women have a very strong professional identity and don’t necessarily accentuate femininity in the same way as French, Spanish or any women from for ex. the Latin or Asian community would do. You can count on that German women academics are quite intellectually oriented and hence wouldn’t mind discussing current affairs at all. But take your cue from her. Some women would appreciate hard rock and heavy metal, while others will be more into modern or classics.
Above all, listen to what she says. Be very nice, polite, charming and witty. If you are all these things, you should be fine.
